Like the loops, perhaps you could add a number to the output so the
problem should be solved :

ecasound -a:1 -i foo -o jack,1 \
           -a:2 -i foo2 -o jack,1

ecasound -a:1 -i foo -a:2 -i foo2 \
           -a:1,2 jack,1
